Christmas Theme Vanilla Cake with Buttercream Frosting and Vegnola™ Granola

I made this delicious 3 layer cake with some granola, Vegnola™ sprinkled on top made by Good Food People® which is made locally here in Winnipeg, Manitoba. They have multiple delicious flavors but for this cake I went with the sweet potato, peanut butter and tahini.You can purchase it from any of these local grocery stores.

So here is the recipe! 

 

Vanilla Cake Recipe

Ingredients
  • 1 cup white sugar
  • ½ cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ½ cup milk
Directions

Step 1: Preheat oven to 350 degrees F (175 degrees C). Grease 3 6 inch pans and/or line  the pans with paper liners.

Step 2: In a large bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan. My hand mixer worked well for this.

Step 3: Bake for 30 to 40 minutes in the preheated oven. The cake is done when it springs back to the touch.

Step 4: Let it cool and level off the layers. I refrigerate each layer in the fridge over night and decorate the cake the next day.

Buttercream Frosting

For the frosting in between the cake layers and a crumb coat layer:

Ingredients
  • 4 cups icing sugar
  • 1 cup softened unsalted butter
  • 2-3 teaspoons vanilla
  • 1-2 tablespoons of milk
Directions

Step 1: combine the icing sugar and the butter and mix them together with a mixer

Step 2: add other remaining ingredients and keep mixing until you get a cream consistency

Step 3: stack the layers of cake with icing in between them. Add the crumb layer of the cake and then refrigerate for a minimum of 1 hour before adding another layer of frosting and decorating.

*To add another layer of frosting to the cake and decorating it I suggest making another batch of buttercream icing.

Decorate with piping bags and any decorating tips you like using. Add sprinkles if you like. I added Christmas theme sprinkles on the sides and then sprinkled delicious granola on top. The cake was DELICIOUS! Try it at home and tell me what you think!
